The nice thing about this also, you can add a bunch of different ingredients each time to change it up. Again, What? Yep, add tuna, or fresh basil leafs or mint leafs, sundried tomatoes and onions, add a hardboiled egg (which you can do at the same time in the same bowl), add hotsauce. The ideas are pretty much endless. Really want to change it up, don't use cheddar, use mozzarella and parmesan with the sundried tomatoes. Vary your cheeses each time you make it and your stomach will thank you. Seriously, it will.
3/4 cup (~180 ml) GF Elbow Macaroni Noodles (dry) You can use regular noodles as well.
1/3 cup (~79 ml) Cheese
1 TBSP Butter or Margarine
2 TBSP Milk
Salt and Pepper to taste
2 cups (500 ml) Water
Optional: sundried tomatoes, green onions, tuna, fresh basil, ginger, vegetables (use frozen and cook that last 3 minutes), chopped radish, fresh tomatoes
Bowl deep enough to boil the noodles.
Microwave the bowl and water ONLY for 3 minutes.
Remove Carefully from microwave and add noodles. Let soak for at least 1 minute. Stir to break up the noodles (they will have stuck together)
Microwave on high for 2 and half minutes, stir. Do this 3 times. Check noodles for doneness. All GF noodles cook differently. The rice based cook slower then the corn based ones. I prefer the corn based ones for mac noodles.
Take out of microwave very, very carefully as it will be hot. Drain the water (use a sieve or colander)
Add butter or margarine, stir.
Add the milk, stir.
Add Cheese. The cheese is your choice, I used a 4 cheese blend this time but you can use any combination of cheeses that you prefer. Stir
Salt and Pepper and any options that you want. I used sundried tomatoes, green onions and hotsauce. I would give you the name but it's not in english. I've included a picture. This sauce is the bomb and use it in soups, on eggs, nachos, tacos and many more. The only place that I have found it is at the 99 Ranch Market. When I go, since it is not close to my house, I buy several jars. Time to make another run.
